The Super Bowl is almost here, which means many people are preparing for their big Super Bowl party.On the John E. Chocolate Crunch from EatingWell Magazine

INGREDIENTS

  • 1 cup Wheat Chex cereal, (2 ounces)
  • 1 cup pretzel sticks broken in half, (2 ounces)
  • 1/4 cup salted roasted almonds, (2 1/2 ounces)
  • 3 tablespoons bittersweet chocolate chips, melted

PREPARATIO

 

  • Combine Chex, pretzels and almonds in a medium bowl. Drizzle with melted chocolate; stir to combine. Spread the mixture on a wax paper-lined baking sheet and refrigerate until the chocolate is set, about 30 minutes.

TIPS & NOTES

  • Make Ahead Tip: Refrigerate in an airtight container for up to 5 days.
  • Tip: To melt chocolate: Microwave on Medium for 1 minute. Stir, then continue microwaving on Medium in 20-second intervals until melted, stirring after each interval. Or place in the top of a double boiler over hot, but not boiling, water. Stir until melted.

Learn How To Can Tomatoes From Your California Insurance Agent

As I mentioned in a previous post, BPA has been found in canned food products. One of the main products are canned tomatoes. I am love tomatoes and use them all the time. I will make pasta sauce with them or just cute up canned tomatoes and eat them in a salad with other vegetables. But since I do not want to be butting the harmful checmical, BPA into my body, I decided to start canning them myself. This recipe I followed is an easy way for you to can your own tomatoes.

How to Can Your Own Tomatoes

What you need:

1. You will need about 7 tomatoes per one quart jar. So depending on how many jars you are making you can decide on how many tomatoes to have.

2. Lemon juice (fresh is always the best way to go)

3. 1 quart of water

4. 2 large pots. 1 to sanitize the jars and 1 to scald the tomatoes. 1 medium pot to heat the water and 1 small pot to sanitize the lids.

5. Canning jars and lids (I like to use quart jars)

Now we can!

1. First pick the tomatoes. Roma tomatoes are most common to use but cherry and grape tomatoes also work.

2. fill large pot with water and submerge jars. Once jars are fully covered by water bring to boil. I like to boil the jars for about 10-15 minutes.

3. Heat water in the medium and small pot until it is boiling. Place lids in the small pot of boiling water for about 10-15 minutes.

4. In the second large pot, boil water and put the tomatoes in for 30 -60 seconds. Then transfer them into a bowl filled with ice water. After they have cooled start peeling of the tomatoes skin and cut into quarters.

5. Next, fill the jars with tomatoes leaving about 1/4 inch room from the top of the jar.

6. Add two tablespoons of fresh lemon juice. Then fill the jars with the boiling water leaving 1/2 inch from top of jar.

7. Put lids and rings on the jar and screw them tightly.

8. Boil the jars in the large pot of boiling water. Make sure they are fully covered in water and leave them for about 40 minutes.

And that’s all! Just lift the jars out of the water using tongs and let them cool. Now you have your own tomatoes to use for pasta and pizza sauce or additions to your favorite dish. Myself and John E. Peakes Insurance Agency hope you enjoy your BPA free canned tomatoes!

March Showers Bring Awareness of Flood Insurance

We all know the saying “April showers bring May flowers.” Well I am hoping that March showers bring April flowers. I don’t know about everyone else, but I am getting tired of this rain. Although I am for rain and love how it benefits the earth we have been getting a lot of rain. And too much rain can sometimes bring problems. One of these problems floods. Although I posted something recently about floods, I want to add a little bit more to keep everyone aware and safe. As with anything natural disaster Mother Nature throws our way, being prepared is the most important thing. Here are some tips to prepare for a flood before in the event one happens near you or you happen to be in a high risk flood zone.

1. If you call your local American Red Cross branch they can tell your homes flood risk. Some areas are more susceptible to flooding than others. Being aware of your zone will help you prepare. Also find out about areas around your home that are prone to mudslides.

2. Make sure your home is stocked with a supply kit. This kit should include first aid items, a battery powered flashlight, bedding such as sleeping bags, warm clothes—water resistant if you have them, canned food, bottled water, and any medications a family member may need in case of emergency.

3. Have an evacuation plan. Know where there is higher ground in your home and town and make sure everyone in the house is aware of what to do in a flood situation. Everyone in the house should have a list of phone numbers handy to call if they are somewhere else at the time of a flood.

4. Be sure to have a list of everything in your home. Filing a claim after a flood with your insurance agency will be easier if you know what is missing or broken. Also making sure you are covered with California flood insurance either under your homeowner’s policy or separately is important so you do not owe a ton of repair money after your house is hit.

Like the saying, “always better to be safe than sorry.” Today I want to cover earthquakes. You may think that your homeowners policy covers earthquake damage, but this is not the case. Make a disaster kit for each person in your household. Include prescription medicine, health insurance, eyeglasses, cash, radio, batteries, flashlight, a first aid kit, manual can opener, and food and water. Make sure you have supplies for your pets too.

When the earthquake starts be sure to get under a table if possible and hold on to it, or drop to a squat against a wall away from windows, cover your head with your hands and hold that positions until it’s safe to evacuate.
